INGREDIENTS :
2 teaspoons vegetable oil ,1 cup finely diced onion,1 garlic clove, minced.
2 cups chicken broth ,1 can (12 1/2 ounces) chicken breast.
1/4 teaspoon dried oregano,2 teaspoon hot chili powder,1/2 teaspoon ground cumin
1 cup canned, drained and rinsed cannelloni beans, coarsely mashed
1/2 cup shredded, sharp low-fat Cheddar cheese and 1 teaspoon cornstarch
METHOD :
Heat oil in a large, heavy saucepan over medium-high heat. Add onion and cook until transparent, about 3 minutes; add garlic and cook 1 more minute. Add chicken broth and boil until liquid is reduced to about half.
Meanwhile, shred the chicken in a small mixing bowl with the back of a fork. Mix in oregano, chili powder and cumin. Stir into the onions and broth, and simmer for 3 minutes. Stir in beans and simmer until thick, about 2 minutes more.
Toss the cheese and cornstarch. Reduce heat to low and stir in cheese until melted.
Serve warm in a bowl with chips.

Chhheeeeeezzzzzyyyy Chicken.......mmmmmm....must try dat one....:) But where dya get oregano here...must try at some supermarkets here...is there any substitute?
Oh i just remembered how you always luvved to cook Chubby..U were sooo much into it right from school days!!!
Remember we had got these macaroni samplesfrom school and gotta back to my place and cooked! HA HA! The kitchen was sooo messy and we were sooo into laffin and talkin ....the result...we made the whole masala and everythin ready and instead of adding the peas we we added the water to the masala in which the peas were boiled!!! HA hA!!!! Then we had ta do it allll over again!! Ohhhhh twas so much fun! :) Miss those days...oh yeh and wat abt the macroni???!!! Boy was it delicioussss!!!! ;)

Basil or thyme can be used as substitutes.
Instead of oregano try fresh parsley chopped or basil.A good substitute for oregano is marjoram, but you might need a little bit more.
