Eggie


Ingredients:(serves 2)
Eggs- 4 ,Oil- 2tsp
Onion- 1/2 (chopped long)
Tomato- 1/2 (chopped),Coriander leaves chopped finely for garnishing
Pepper- 1tsp, Salt to taste.

Method:
Heat oil in a saucepan(medium or small in size). Add onions and fry for 1min, add the cut tomatoes, salt, pepper and fry for 4min on medium flame. Keep it on low flame, Spread the onions and tomatoes evenly in the pan,break the eggs on it so that it covers it well. Sprinkle little pepper and coriander leaves.Immediately cover the pan tightly and leave till it gets done.Open lid, cut and remove the egg on plate (like a pizza slice). Eat with toast.
(Optional- can add other vegetables like mushrooms and peas).
