My personal helpful kitchen and cooking tips.

1.To prevent egg shells from cracking, add a pinch of salt to the water before hard-boiling.

2. To get the most juice out of fresh lemons, put them in microwave for 10 seconds before squeezing.

3.To reduce the smell of raw chicken or meat in cooked dishes, wash and rub maida flour onto the meat and leave it for atleast an hour before you rinse and cook it.

4.For crispy kababs, while making the paste for deep frying, use only egg and curds for mixing the paste.

5.Potatoes will take food stains off your fingers. Just slice and rub raw potato on the stains and rinse with water.

6. To get rid of hard stains on dishes, use the back side of the bristles in a brush. It comes off without using too much pressure.

7.When cleaning becomes a problem after cooking many dishes and in large quantities- spread a plastic wrap all over the counters before you start cooking, it can be removed without any mess in a few seconds after the cooking is done.

8.Leftovers from chicken roast or other grilled meats and vegetables can be stored and used later to make sandwiches ans soups.

9.Use chicken broth instead of water for cooking any non-vegetarian dish, it gives more taste and flavor.

10.To remove the excess fat from lamb, pork or goat curry dishes. After the dish is cooked, put it in a medium sized casserole and refrigerate for a few hours. Remove the thick golden color(the settled meat fat and oils) top layer with a spoon before re-heating it.
